For my fermentation project I am excited to start making kefir. Kefir is a more healthful drinkable yogurt with amazing probiotic benefits due to the fermented bacteria. 
I am going to start with basic whole milk kefir, and I will also try nut milk, and I will try different flavorings like fruit and maple. My intestines are looking forward to reaping the benefits from this project!

    I have also decided to make kefir for my project. I am very excited as well. I already make homemade yogurt using a crockpot and I love it! So I am hoping kefir will be my next adventure that I continue to do as time goes on.
    I am going to practice making milk and water kefir, but I have to say nut milk kefir sounds very interesting. I am intrigued by this idea. So I am wonder what kind of nut milk will you use and how will you get it?

  2. Hi Ferne,
    I am not sure about the logistics about making nut milk kefir because now that I have done some more research I have read that it is the lactose in dairy that produces the desired result. Have you heard this or is it not true? I have had lactose free kefir which is why I originally thought I could make nut milk kefir. How will you make water kefir?
